IOWT x Beeble Tomato Margarita
Ingredients
- 3 medium sized Isle of Wight Tomatoes, diced
- 100g sugar
- 60ml Honey Tequila from beebleco
- 30ml fresh lime juice
- Handful of basil
- Flaky salt
- Isle of Wight Cherry Tomatoes, to garnish
Method
Add the Isle of Wight diced Tomatoes, sugar and 4 tbsp water to a small saucepan. Simmer gently for 10 minutes until softened and juicy.
Blend until smooth, then strain through a fine sieve. Leave to cool completely.
Run a lime wedge around the rim of your glasses and dip into flaky salt.
Fill a cocktail shaker with ice. Add 60ml of the cooled tomato syrup, the Honey Tequila, lime juice and a few basil leaves.
Shake well until chilled, then strain into ice-filled glasses.
Garnish with Isle of Wight Cherry Tomatoes and extra basil if you like.
