Ultimate Cheese & Tomato Toastie

Serves 1

Ingredients

  • 2 slices sourdough bread 
  • Butter, room temperature
  • 1-2 Isle of Wight tomatoes, thinly sliced
  • 1 heaped tsp Isle of Wight Tomato and Chilli jam, plus extra for spreading
  • 5-6 slices Godminster Organic Vintage Cheddar
  • Salt and freshly ground black pepper


Method

Slice two thick pieces of sourdough and set aside.

Heat a small non-stick pan over medium heat.

Add the tomato slices, followed by ½ tsp butter and 1 tsp chilli jam.

Cook for 1-2 minutes per side, until the tomatoes are softened, lightly golden, and sticky from the jam.
Remove to a plate and season lightly with salt and pepper.

Butter one side of each slice of bread - these will be the outer sides of your toastie.

Place one slice butter-side down on your board.

Layer on the sliced cheddar, followed by the jammy tomatoes, and then spread over an extra spoonful of chilli jam.

Top with the second slice of bread, butter-side up.

Heat a clean pan over medium-low heat.

Place the sandwich in the pan and press gently with a spatula. 

Cook for 2-3 minutes per side, until golden, crisp, and the cheese is melted.

Slice in half and enjoy immediately while the cheese is gooey.
