Ingredients
- 400g Butter Beans
- 100ml double cream or plant-based cream
- 140g Isle of Wight Smoked Tomato Pesto
- 2 cloves of garlic, chopped
- 1 tbsp of chopped parsley
- Olive oil
Method
Fry garlic until golden
Add pesto, cream, and a splash of water until the mixture forms a smooth sauce texture
Add butterbeans and warm through
Serve with a sprinkle of parsley and top on to toasted sourdough or pasta
