Easy Peasy Tomato Canapés

Ingredients
Option 1 -
- 100g Isle of Wight Oak Smoked Tomatoes
- Mini croustades or crackers
- A handful of olives, sliced in half
- fresh goat’s cheese 250g
- 1 tbsp olive oil
Option 2 -
- IOW Cherry Tomatoes, sliced in half
- Mini croustades or crackers
- Mozzarella sliced into cubes
- Avocado chopped into cubes
- A few basil leaves
Method
Option 1 - Whip the goat’s cheese and oil by hand, or in a mixer on high speed for 2 minutes. Drain the oak roasted tomatoes of oil. Start to assemble by taking crackers or croustades and adding the whipped goat's cheese, oak roasted tomatoes, sliced olives and serve.
Option 2 - Gather ingredients and ensure everything is chopped small enough to add to cracker or croustades. Serve immediately and enjoy!
