ISLE OF WIGHT TOMATO BUBBLE & SQUEAK WITH SHAKSHUKA SAUCE & CHILLI JAM

Ingredients
- Leftover cooked potatoes (about 1 cup)
- ½ Onion
- 5 Sprouts roughly chopped
- 4 Cherry tomatoes
- ½ jar Isle of Wight Shakshuka Sauce
- 1 tbsp Isle of Wight Olive Oil
- 1-2 eggs
- 1 tbsp Isle of Wight Green Tomato Chilli Jam
- Salt & pepper to taste
- Fresh herbs (optional)
- 1 egg
Method
Add leftover potatoes and veg to a hot frying pan with olive oil.
Press down and fry until golden and crispy on one side.
Flip or mix gently to heat through evenly.
Pour in half a jar of Isle of Wight Shakshuka Sauce and simmer for a minute.
In a separate pan, fry eggs until crispy-edged.
Serve the bubble & squeak topped with fried eggs and a dollop of IOWT Chilli Jam.
Finish with a sprinkle of herbs and cracked pepper.
