ISLE OF WIGHT TOMATO BUBBLE & SQUEAK WITH SHAKSHUKA SAUCE & CHILLI JAM

Ingredients

  • Leftover cooked potatoes (about 1 cup)
  • ½ Onion
  • 5 Sprouts roughly chopped
  • 4 Cherry tomatoes
  • ½ jar Isle of Wight Shakshuka Sauce
  • 1 tbsp Isle of Wight Olive Oil
  • 1-2 eggs
  • 1 tbsp Isle of Wight Green Tomato Chilli Jam
  • Salt & pepper to taste
  • Fresh herbs (optional)
  • 1 egg 

Method

Add leftover potatoes and veg to a hot frying pan with olive oil.

Press down and fry until golden and crispy on one side.

Flip or mix gently to heat through evenly.

Pour in half a jar of Isle of Wight Shakshuka Sauce and simmer for a minute.

In a separate pan, fry eggs until crispy-edged.

Serve the bubble & squeak topped with fried eggs and a dollop of IOWT Chilli Jam.

Finish with a sprinkle of herbs and cracked pepper.
