IOW Cherry Tomatoes and Sardines On Toast
Ingredients
- 1-2 slices Sourdough bread
- 1 garlic clove, peeled and halved
- 2tbsp Extra Virgin Olive Oil
- 10 cherry tomatoes (some halved, some whole)
- 1 red onion, sliced
- 1 tin Sardines in Chilli Oil
- 3 - 4 basil leaves, roughly chopped
- A drizzle of IOWT Tomato Balsamic
Method
Add your tomatoes into a frying pan with olive oil and finely sliced red onion.Cook until the tomatoes and onion are jammy and caramelised. Remove from the pan.
Top up with another drizzle of olive oil if needed. Add your sliced sourdough to the pan and toast lightly. Once toasted on both sides, rub a garlic clove over the top of the toast.
Top the toast with the warm tomato mixture and layer over the sardines. Drizzle with Tomato Balsamic and sprinkle with pepper and fresh herbs.
