Bank Holiday Tomato Board

Ingredients
- 700g mixed Isle of Wight Tomatoes
- 1 burrata
- 1 jar Isle of Wight pesto
- 1 jar Isle of Wight chilli jam
- Drizzle of Isle of Wight olive oil
- 150g mixed olives
- 120g of charcuterie or sliced salami
- 100g marinated artichokes
- 1 packet of good-quality crackers
- Handful of basil
- Flaky salt
- Black pepper
- Optional extras: cornichons, crackers, roasted peppers, marinated artichokes
Method
Start by placing the burrata at the centre of your board. Arrange a mix of whole, halved and sliced tomatoes around it for colour and variety. Add spoonfuls of pesto and chilli jam, then tuck in olives, charcuterie and any pickled elements.
Layer toasted bread around the edges, then finish everything with olive oil, a drizzle of balsamic, flaky salt, black pepper and fresh herbs.
Serve immediately and let everyone build their own perfect bite.
