
All the good stuff between two pieces of sourdough - heaven!

- 2–3 Isle of Wight Heritage Tomatoes
- 2 slices sourdough bread
- 2 tsp Isle of Wight Spicy Aioli
- 2 tsp Isle of Wight Smoked Tomato Pesto
- Handful of fresh spinach leaves
- Drizzle of Isle of Wight Greek Extra Virgin Olive Oil
- Pinch of salt
- 1 ball Mozzarella
- 1 small Courgette
Method
Thinly slice the courgette length ways and grill for 2-3 minutes per side in a little olive oil.
Slice the tomatoes and mozzarella. Cut 2 thick slices of sourdough and lightly toast.
To assemble:
Add Spicy Aioli to one piece of bread and Smoked Tomato Pesto to the other.
To one side, layer on courgette, spinach, mozzarella, and tomato slices.
Season tomato slices with olive oil, salt and pepper. Close the sandwich, slice and enjoy.
