Isle Of Wight Tomato & Butter Bean Dip

Ingredients

1 × 570g jar Bold Bean Co Queen Butter Beans

2 tbsp Isle of Wight Slow Roasted Tomatoes

1 tbsp Isle of Wight Tomatoes Olive Oil

1 clove garlic, crushed

1 tbsp lemon juice

Pinch of chilli flakes

Salt, to taste (optional)

To serve: drizzle of olive oil, sprinkle of chilli flakes. 

Enjoy with chopped cucumber, carrots and peppers

Method

Add the butter beans, IOWT Slow Roasted Tomatoes, olive oil, garlic, lemon juice, and chilli flakes to a blender or food processor.

Blitz until smooth and creamy, scraping down the sides if needed. If the hummus feels too thick, add a little water and blend again until you reach a soft, spoonable consistency.

Finish with a drizzle of olive oil and sprinkling of chilli flakes. Serve with crisp vegetables for dipping.
