Griddled Aubergine Rolls

Griddled Aubergine Rolls

Ingredients

  • 2 Aubergines
  • 2 Tbsp Olive Oil
  • 250g Feta
  • 1 Red Chilli
  • 1 bunch of mint
  • 1 lemon
  • Black pepper to taste

Method

Preheat a BBQ or griddle to a high heat.

Cut 2 large aubergines into thin slices lengthwise and brush both sides with olive oil.

Cook them for about 2 minutes on each side until golden and tender.

Crumble 250g of feta in a bowl and stir in 1 finely chopped red chilli, 1 bunch of finely chopped mint, the juice of 1 lemon and a good grind of black pepper.

Scoop a heaped tbsp of the feta mixture onto the end third of the warm aubergine. Roll each slice up as you go to form a soft, stuffed bundle.

Place join side down on a plate and sprinkle with a little more mint. Enjoy!
