Ingredients
- 1 tbsp Isle of Wight Tomatoes Oak-Smoked Tomato Balsamic
- 1 tsp fresh lemon juice
- 2 tbsp of extra virgin olive oil
- Sea salt and freshly ground pepper
- 300g Isle of Wight mixed specialty tomatoes (medium sizes work best)
- 2 tsp chopped fresh tarragon
- 5 strawberries sliced
Method
Whisk the balsamic vinegar, lemon juice and olive oil in a bowl. Set aside.
Cut the tomatoes into slices and arrange in a single layer; season with salt and pepper. Transfer to a bowl and drizzle with half of the dressing. Add the tarragon and strawberries & toss to give all the tomatoes a good coating.
Divide the tomato mixture among plates. Drizzle with more dressing. Serve immediately.
