Ingredients
- 2 packs of Garlic and Herb Boursin cheese
- 2 generous handfuls of Isle of Wight cherry tomatoes
- 1–2 tbsp Isle of Wight olive oil (plus more to drizzle)
- A small bunch of fresh basil, chopped
- 1 tsp balsamic glaze
- Sea salt and freshly cracked black pepper, to taste
- Crisps, crackers or crusty bread, to serve
Method
Spoon and spread the Boursin cheese onto a shallow serving plate or dish, creating swoops and swirls.
Finely chop the tomatoes and place in a bowl. Add olive oil, chopped basil, a pinch of sea salt, and black pepper. Toss gently to combine.
Spoon the tomato mixture over the Boursin base, letting the juices mingle.
Drizzle the top with a little more olive oil and a swirl of balsamic glaze.
Dive in with crackers, crisps, or slices of good sourdough.
